Certified Food Protection Manager (CFPM)
Each food service establishment, except certain types of establishments deemed by the health authority to pose minimal risk of causing, or contributing to, foodborne illness based on the nature of the operation and extent of food preparation, shall be under the operational supervision of a Certified Food Protection Manager (CFPM). The certification shall be valid for five (5) years and shall not be transferable from the individual to whom it was issued.

Allergen Awareness
All Certified Food Protection Managers employed by a non-franchise Category I establishment must receive or obtain training in basic allergen awareness principles. The certification shall be valid for three (3) years and shall not be transferable from the individual to whom it was issued

Food Handler
All food handlers employed by a food establishment other than someone holding a Food Protection Manager Certificate shall receive or obtain American National Standards Institute (ANSI) - Accredited Training or Department Approved Training in basic safe food handling principles (IDPH). The certification shall be valid for three (3) years and shall not be transferable from the individual to whom it was issued
